There's a mission editor for free flight or customised AI ass whooping (co-op or offline). The upside down flying is in a dynamic campaign where you try and win 3 or 5 missions before the enemy does (again co-op or offline). And the sunset photo is from a single mission in sim mode (hence no HUD).
You can also test fly any plane before you buy it. I think you need to have a high enough level to unlock it though.
