Official Roms are good, But ever better than the ones built by the Community.
The ones that have them features you always fort would be a good idea, but never seen it in practise.
Couple of terms you will come across on the forum:
"There is 100's but off the top of my head"
Rooted: Means the Handset has been Unlocked "Rooted" This basically gives you a read and write on all system files
Radio: Still not 100% but i imagin them to be like up2 date drives for your Hardware
HAVS and SVS: HAVS changes the voltages used for each frequency, SVS has fixed voltages. HAVS should give better battery life, SVS should be more stable. Using lower voltages or higher frequencies can make your phone unstable, flash with caution.
Kitchens: Online Sites that cook a Flashable file for you,
You can customise how you want your theme / look to be on your phone,
Wait 5 minutes for your file and bingo Flash it.
CM: CyanogenMod, One of the biggest names in the community, these guys have added soo many features to the android,
All them features every phone should have. but never has.
From Silent hours and exclusions to Customising what Keys do what on your phone.
A word of Advise
Gingerbread is pretty new, and alot of Roms still seem buggy.
I have gone through my fair few and still find the older ones better.
